Sustainable wine country-inspired restaurant set to open this fall
Gaithersburg, MD (RestaurantNews.com) Sixty Vines, the restaurant known for transporting guests to wine country, is set to make its Gaithersburg debut later this fall. Located at 231 Rio Boulevard, Sixty Vines invites guests to discover 60 wines on tap from wine regions around the world, paired with chef-driven dishes like wood-grilled steaks and hand-crafted pizzas designed to share among friends.
Sixty Vines’ relaxed, wine country restaurant will span just over 9,000 square feet with a light-filled dining room, a lively bar that opens to the patio, and private dining spaces for more intimate gatherings. The design balances style and comfort through a mix of banquettes, communal tables, and lounge seating. From laid-back weekend brunch to enjoying a glass of wine at happy hour or a cozy weeknight dinner, the setting encourages sharing and connection.
“We’re excited to bring Sixty Vines to Gaithersburg, a city that embraces great food and new experiences,” said Jeff Carcara, CEO of Sixty Vines. “Our menu is meant to be shared, with dishes that make it easy to discover new flavors and connect around the table. Sixty Vines is all about creating an experience that’s as much about the people you’re with as the food you enjoy together.”
Sixty Vines’ menu celebrates seasonal flavors and fresh, locally sourced ingredients. Guests can build their own charcuterie boards, enjoy crisp salads and hand-tossed pizzas, or choose from entrées like Atlantic Salmon, Pan Roasted Chicken, the Double Cabernet Burger, and Wood-Grilled Filet. Dessert standouts include Basque Cheesecake and Deviled Affogato. The team is always ready to suggest a wine that complements each dish, making every visit an opportunity to try something new.
Sixty Vines’ wine on tap system offers a sustainable approach to serving wine. Each keg holds 26 bottles that are reusable around 1,500 times over their refillable lifetime. This eco-friendly tap system not only reduces waste and protects the planet but also offers guests the closest ‘from the barrel’ tasting experience outside a vineyard.
By partnering with many of the world’s top winemakers, Sixty Vines offers exclusive wines not commonly available by the glass. It also offers handcrafted cocktails with choices ranging from a spirit-forward Tequila Fix to a light and refreshing Frozè, plus beers, mocktails, and non-alcoholic wines. In addition to its premium wine selection, Sixty Vines maintains a casual vibe, welcoming guests to experience everything from multi-course wine dinners to a quick glass of wine and a snack as a late-in-the-day refresher.
Sixty Vines will offer brunch on Saturday and Sunday until 3 p.m., along with lunch and dinner throughout the week. General Manager Paul Fitz and Executive Chef William Sandkuhler will lead the restaurant.
This will be Sixty Vines’ first Maryland location, expanding its presence from Texas, Florida, North Carolina, Tennessee, Virginia, and Washington, D.C.
